A single shop vs multiple shops
A shop on Squarespace is a page of products, those products can be given categories and users can click to view products by category. This setup is ideal for most people.
However, if you wanted to write a unique description to show at the top of the page for each of your categories you would not be able to do so. This is because all of your products are on the same page.
So the solution would be to create multiple shops - one for each category. That way you could have different text showing for each category.
Another case in which you might need multiple shops is if you have more than one filter. For example, you sell clothing and you want users to select ‘adult’s’ or children’ before selecting ‘t-shirts’ or ‘hoodies’. In this case we would create an ‘adult’s’ shop and a ‘children’s’ shop and give the products in both shops a category of ‘t-shirts’ or ‘hoodies’.
The downside to having products held in different shop pages is that there is nowhere that the user can go to see all of the products in one place. To get around this you could have a separate shop page called ‘All’ which you duplicate all of your products into. It’s worth noting, however, that this could make it more difficult to keep track of stock numbers.
